Cozy Carrot Soup:
Chop carrots, place in roasting pan, and drizzle with olive oil. Stir to coat. Roast at 400 degrees or under broiler until tender and lightly caramelized on the edges, stirring occasionally.
Chop onions roughly, then saute with butter until soft and sweet in stock pot. Chop Ginger across the grain (to avoid long strings in finished soup) and add to onions. Add stock and carrots. Simmer gently for 20 mins.
Blend thoroughly with immersion blender or carefully in blender while adding cream. Salt to taste. Serve warm with a dollop of sour cream or yogurt and fresh chopped parsley.
